Conversion rate
Conversion rate is the share of guests (or stays) who buy something from your honesty shop. It tells you whether the shop is being noticed and used, separate from how much each buyer spends.
Footfall
Footfall is the number of guests who pass your honesty shop and could buy from it. In rural hospitality it's driven by occupancy and by where the shop sits within the guest's stay.
Honesty shop
An honesty shop is a small, unstaffed on-site shop where guests take what they want and pay without a cashier, trusting them to settle up. In rural hospitality it turns a corner of a cabin or lodge into a source of local produce and extra income.
Shrinkage
Shrinkage is the value of stock that leaves your honesty shop without being paid for — through unpaid takings, wastage or breakage. In an honesty shop it's usually caused by friction and unclear pricing, not theft.
